Chunky Vegetable Salad w Lemon Cumin

Feel fuller longer on less calories by boosting your fiber intake! This recipe is also high in plant protein!
1/3 cup chickpeas, rinsed and drained
1/3 cup kidney beans, rinsed and drained
1/4 cup shredded carrot
1/4 cup chopped jicama
1/4 cup chopped apple
1/4 cup clicked red bell pepper (or yellow or orange)
1/4 TBSP sliced celery
1/4 cup chopped cucumber
1 TBSP pumpkin seeds
Mix above ingredients in a bowl. In a separate small bowl, whisk together juice of 1/2 lemon, 2 tsp olive oil, 1 TBSP red wine vinegar, 1 tsp cumin; pinch of sea salt. Drizzle over salad.Feel fuller longer on less calories by boosting your fiber intake! This recipe is also high in plant protein!
