Fiesta Quinoa Pilaf

If you haven't tried quinoa, you need to!
Quinoa is an amino acid-rich (a complete protein) seed that has a fluffy & slightly crunchy/nutty texture when cooked. Quinoa is gluten-free, and was once considered "the gold of the Incas." It's a very good source of manganese, magnesium, iron, copper & phosphorus, & shown to be beneficial for people with migraine headaches, diabetes and atherosclerosis.
INGREDIENTS:1 Tsp olive oil; 1 tsp sea salt; 1/2 tsp black pepper; 2 cloves minced garlic; 1/2 tsp ground cumin; 1/2 tsp chili pepper; 2 cups cooked quinoa (Cook quinoa in 4 cups water - boil, then reduce heat and cover & cook until liquid is absorbed. About 20 min); 2 tbsp lime juice; 1/4 cup chopped scallions; 1/4 cup chopped fresh cilantro
**Optional - you can also add black beans, corn, avocado and/or diced tomatoes to this!
DIRECTIONS: Mix all ingredients in large bowl with cooked quinoa and Serve!
