Roasting Vegetables is an easy, healthy way to get prepare vegetables as side. It helps maintain their water content & nutrients (rather than boiling them or adding them to a creamy casserole). Just cut up VEGGIES: red potatoes, zucchini, baby carrots, sweet potatoes, onions etc. Spread them on a sprayed roasting pan. Sprinkle them with sea salt, a drizzle of olive oil & add whole garlic cloves. Bake at 400 degrees & dust with parmesan for the last 10 minutes in the oven. YUM!
